We select only the healthiest grape clusters and the most beautiful berries. Each grape is handled gently, one by one, without breaking the skin, and placed into a sealed vat with no exposure to air.
Over the first 10–12 days of patient waiting, an initial fermentation begins inside each intact grape. This natural process traps intense aromas, vibrant fruity notes, and a lightly sparkling sweetness within the berries.
A soft pressing, slow fermentation, and quick bottling complete the creation of this young “Novello” wine. We recommend serving it cool from the cellar (12–14°C) and enjoying it within 6–8 months of the harvest.
It pairs beautifully with roasted chestnuts and classic autumnal & winter dishes, but its lively, youthful character also invites more creative pairings.
